The Foolproof Dairy-Free Vanilla Pastry Cream

The backbone of French pastry, made entirely dairy-free. Master the exact technique to achieve a rich, thick, and velvety vanilla custard that pipes perfectly into your tarts and éclairs, using zero heavy cream.

  • 500 ml (2 cups) Barista-grade oat milk
  • 1 Vanilla bean (split and scraped) or high-quality vanilla paste
  • 4  ​Large egg yolks
  • 100 g (1/2 cup) Granulated sugar
  • 40 g (1/3 cup) ​Cornstarch
Optional
  • 20 g (1.5 tbsp) High-quality cold vegan butter, cubed For an extra glossy finish

Method
 

  1. ​Infuse the Milk: In a saucepan, combine the barista oat milk and the scraped vanilla seeds (along with the pod). Bring to a gentle simmer, then turn off the heat, cover, and let it infuse for at least 15 minutes. Remove the pod before using.
  2. Blanch the Yolks: In a mixing bowl, vigorously whisk the egg yolks and granulated sugar until the mixture becomes thick and noticeably pale (about 2 minutes). Whisk in the cornstarch until completely smooth and lump-free.
  3. ​Temper the Eggs: Slowly pour half of the warm infused milk into the egg mixture while whisking constantly. This brings the eggs up to temperature without scrambling them. Pour the entire mixture back into the saucepan with the remaining milk.
  4. The Boil (Crucial Step): Place the saucepan over medium heat, whisking constantly and scraping the bottom and sides of the pan. As it thickens, bring it to a visible boil. Once bubbling, continue whisking vigorously over the heat for exactly 1 full minute.
  5. Chill: Remove from heat. If using, whisk in the cold vegan butter for extra gloss. Immediately pour the cream into a shallow dish, press a piece of plastic wrap directly onto the surface of the cream (to prevent a skin from forming), and chill in the refrigerator until completely firm (at least 2 hours).
  6. Chef's Tip: The 1-Minute Boil Rule
    ​Most beginners are terrified of boiling egg yolks, fearing they will scramble. But in a pastry cream, the cornstarch actually protects the egg proteins. You MUST let the cream come to a bubbling boil and cook for exactly one minute. Why? This neutralizes an enzyme present in the egg yolks (alpha-amylase) that will otherwise break down the starches and turn your thick cream into a watery soup the next day.
