Method
 

  1. The Base: Heat the olive oil in a wide, heavy-bottomed pan over medium heat. Add the finely diced shallots and gently sweat them until translucent, without letting them brown.
  2. Toasting the Rice: Add the unrinsed rice to the pan. Stir continuously for 2 to 3 minutes until the edges of the grains become slightly translucent. This step seals the grains so they hold their shape.
  3. Deglazing: Pour in the white wine. Stir until the liquid is completely absorbed and the alcohol has evaporated.
  4. The Broth: Begin adding the simmering vegetable broth one ladle at a time. Stir frequently. Wait until the liquid is almost completely absorbed by the rice before adding the next ladle. Continue this process for about 15-18 minutes until the rice is al dente (tender on the outside, slightly firm in the center).
  5. The Mantecatura (Crucial Step): When the rice is cooked but still slightly loose and wavy in the pan (not dry!), immediately remove the pan from the heat. Add the cold vegan butter and the nutritional yeast. Stir vigorously and rapidly for 1 to 2 minutes. This creates a perfect, glossy emulsion. Season with salt and pepper, and serve immediately on warm plates.

    Why must the vegan butter be cold, and why must the pan be off the heat? If you add fat while the pan is still over a flame, the heat will cause the fats and liquids to separate, resulting in an oily risotto. By vigorously stirring cold butter into the hot rice off the heat, you create a thermal shock that forces the fat and the starchy cooking liquid to bind together into a flawless, creamy emulsion.
